Creamy Corn Pasta with Basil

This week we received our monthly shipment from the Regional Food Bank of Northeastern New York for Mass Distribution where we receive 10-20k lbs. of surplus food. As the Washington County site for Mass Distribution, we will share this food with other pantries and food access organizations in the area to distribute to those who need it. This month, we received crates of a crowd-favorite summer grain: corn! You can grill or boil it for some classic corn on the cob, or if you’re feeling adventurous, check out this yummy recipe for creamy corn pasta with basil! This is a wonderful New York Times summer pasta dish with a luscious sauce made from pureed corn and sweet sautéed scallions.
