About the Recipe
A delicious and fresh dip that can be enjoyed with crackers, vegetables, or your favorite meat.
Ingredients
½ cup grated or minced cucumberÂ
1 cup Greek yogurtÂ
1 tablespoon lemon juiceÂ
½ tablespoon olive oilÂ
1 garlic clove, mincedÂ
¼ teaspoon saltÂ
1 tablespoon chopped fresh dillÂ
1 tablespoon chopped fresh mint, optionalÂ
Preparation
Place the grated or minced cucumber on a towel and gently squeeze out a bit of the excess water.Â
In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill, and mint, if using.Â
Chill until ready to use. Enjoy with roasted vegetables, chicken, or salmon or use as a dip with your favorite chopped vegetables or chips.Â
