Sweet Potato Pie

About the Recipe

A healthy and delicious version of a classic Thanksgiving pie recipe!

Ingredients

  • 1 1/2 lbs of sweet potato

  • 2 tbs butter, softened

  • 3/4 cup brown sugar

  • 1/2 cup milk of choice

  • 2 eggs

  • 1/2 tsp ground cinnamon

  • 1 tsp pumpkin pie spice

  • 1 tbs fresh grated ginger (optional)

  • 1 tsp vanilla extract

  • 9 inch unbaked pie crust 

Preparation

  • Boil sweet potato whole in skin until soft (about 50 minutes). Run cold water over and remove skin. Blend potatoes in blender or mash to remove all fibers. 

  • Place potatoes in a bowl, add butter, and mix well. Mix in sugar, milk, eggs, cinnamon, ginger, vanilla and beat until mixture is smooth.

  • If using homemade crust, on a floured surface, roll dough into a large disk and lay into a greased pie dish.

  • Pour pie mixture into unbaked pie crust in 9-inch dish and bake at 350 for 55 to 60 minutes, or until knife inserted in center comes out clean. Enjoy with whipped cream.
