About the Recipe
A healthy and delicious version of a classic Thanksgiving pie recipe!
Ingredients
1 1/2 lbs of sweet potato
2 tbs butter, softened
3/4 cup brown sugar
1/2 cup milk of choice
2 eggs
1/2 tsp ground cinnamon
1 tsp pumpkin pie spice
1 tbs fresh grated ginger (optional)
1 tsp vanilla extract
9 inch unbaked pie crustÂ
Preparation
Boil sweet potato whole in skin until soft (about 50 minutes). Run cold water over and remove skin. Blend potatoes in blender or mash to remove all fibers.Â
Place potatoes in a bowl, add butter, and mix well. Mix in sugar, milk, eggs, cinnamon, ginger, vanilla and beat until mixture is smooth.
If using homemade crust, on a floured surface, roll dough into a large disk and lay into a greased pie dish.
Pour pie mixture into unbaked pie crust in 9-inch dish and bake at 350 for 55 to 60 minutes, or until knife inserted in center comes out clean. Enjoy with whipped cream.
