About the Recipe

A super easy and healthy dish made with only a handful of ingredients


  • 3 cups sweet potato, grated

  • 1 onion, finely diced

  • 3 garlic cloves, finely diced

  • 2 eggs

  • 1/2 cup flour

  • 1 tsp salt

  • 2 tbs oil


  1. Grate and dice vegetables and dump into a dry, non-fuzzy dish towel. Wrap the vegetables and squeeze out as much liquid as possible.

  2. In a large bowl mix together the eggs, flour, and salt. Add the vegetables to the bowl and stir to combine.

  3. Heat a large skillet over medium heat. Add the oil. Shape 1/4 cup of batter into a patty and place it on the hot skillet and flatten.

  4. Cook for 4-5 minutes on each side until browned.
