Stuffed Breakfast Bell Peppers

Start your day off right with these colorful and nutritious bell peppers filled with eggs, bacon, and cheese. Perfect for meal prep, these peppers are a great way to enjoy a nutritious breakfast on-the-go.


  • 2 bell peppers

  • 1 tablespoon kosher salt

  • 1 tablespoon ground pepper

  • 1 1/2 cups shredded cheese of choice

  • 4 large eggs

  • 4 strips cooked bacon (optional)


  1. Preheat oven to 350°F

  2. On a cutting board, split the bell peppers in half from stem to base. Cut out the stem and the seeds.

  3. Transfer halved peppers to a baking tray, cavity side up. Sprinkle each half with salt and pepper.

  4. Bake for 15-20 minutes, until peppers are slightly soft.

  5. Sprinkle the 1 cup of cheese evenly among the four pepper halves. Then crack 1 egg into the center of each pepper.

  6. Sprinkle the salt, pepper, crumbled bacon (if using), remaining 1/2 cup of cheese on top of the eggs.

  7. Bake for 15-20 minutes, until egg whites are set. Serve!
