About the Recipe

Whether you roast solo or in a veggie medley, this is the perfect healthy side dish


  • 1 large celeriac

  • 2 tablespoons olive oil

  • 2 teaspoons Italian seasoning

  • Salt and pepper to taste


  1. Preheat the oven to 400°F

  2. Peel the celeriac then chop into chunks.

  3. Add to a bowl with oil and seasonings and toss to coat

  4. Spread into a single layer on a sheet pan and roast for 15-20 minutes or until golden on the outside and soft and cooked inside.
