About the Recipe
Potato pancakes, or latkes, are a staple meal for Hanukkah, the Jewish festival of lights.
Ingredients
4 potatoes
1/2 onion
1 egg
2 tbs breadcrumbs or flour
1 tsp salt
1/2 tsp black pepper
oil for frying or baking
Preparation
Grate potatoes and onion with box grater or food processor.
Transfer the grated potato and onion onto a kitchen towel. Gather the corners up and twist and squeeze the potatoes and onion as hard as you can until no more liquid comes out.
Add the potatoes, onion, egg, breadcrumbs or flour, salt, and black pepper to a bowl and mix until combined. Let sit for 10 minutes.
Scoop 1/4 cup of the latke mixture onto a fish or flat spatula. Flatten with your fingers to a 4-inch pancake.
If pan frying: heat oil of choice over high heat in skillet. When oil is hot, add pancakes to pan and fry until golden on both sides, 4-5 minutes per side. Lower heat if pancakes start to burn. Transfer to paper towels to cool and drain excess oil.
If baking: Preheat oven to 450. Add pancakes to oiled pan and bake for 15 minutes on each side, or until they’re golden brown.
Enjoy with applesauce or sour cream.
