About the Recipe

Potato pancakes, or latkes, are a staple meal for Hanukkah, the Jewish festival of lights.

Ingredients

  • 4 potatoes

  • 1/2 onion

  • 1 egg

  • 2 tbs breadcrumbs or flour

  • 1 tsp salt

  • 1/2 tsp black pepper

  • oil for frying or baking

Preparation

  • Grate potatoes and onion with box grater or food processor.

  • Transfer the grated potato and onion onto a kitchen towel. Gather the corners up and twist and squeeze the potatoes and onion as hard as you can until no more liquid comes out.

  • Add the potatoes, onion, egg, breadcrumbs or flour, salt, and black pepper to a bowl and mix until combined. Let sit for 10 minutes.

  • Scoop 1/4 cup of the latke mixture onto a fish or flat spatula. Flatten with your fingers to a 4-inch pancake.

  • If pan frying: heat oil of choice over high heat in skillet. When oil is hot, add pancakes to pan and fry until golden on both sides, 4-5 minutes per side. Lower heat if pancakes start to burn. Transfer to paper towels to cool and drain excess oil.

  • If baking: Preheat oven to 450. Add pancakes to oiled pan and bake for 15 minutes on each side, or until they’re golden brown.

  • Enjoy with applesauce or sour cream.
