Kale Apple Salad

About the Recipe

A delicious and nutritious salad that takes the chore out of eating salad.



  • 1 garlic clove minced or grated

  • 1/3 cup extra-virgin olive oil

  • ¼ cup cider vinegar

  • 2 teaspoon Dijon mustard

  • 2 teaspoons honey

  • ½ teaspoon salt

  • ¼ teaspoon freshly ground pepper


  • 4 cups finely chopped kale

  • 1/2 cup chopped walnuts

  • 1 apple cored and diced

  • 1/4 cup goat cheese (can substitute with any cheese or omit)

  • 3 tbs dried cranberries or raisons


  1. Whisk the dressing ingredients in a bowl large enough to hold the kale

  2. Chop kale and add to the bowl. Using clean hands, coat the kale with the dressing, then squeeze the leaves to break them down slightly and to get the flavor of the dressing into the leaves. After a few minutes of massaging, the kale leaves will be darker, softer and will have reduced in size. *Massaging kale makes it easier to digest

  3. Once your kale is ready, toss in the walnuts, cheese, apple, and raisins.
