About the Recipe
With a delicious dressing made from fresh herbs this is an easy and nutritious dish that is the perfect on a hot summer day.
Ingredients
1 batch of Green Goddess Dressing
2 cups finely chopped cabbage
2 cups chopped arugula
1 cup finely chopped broccoli
1 cup diced cucumber
3 cups cooked pasta
Preparation
In a large bowl combine cabbage, arugula, broccoli, cucumber, and pasta.
Pour green goddess dressing over mixture and stir to combine.
Refrigerate until ready to eat. Store in fridge in an air-tight container for 4 days.
Feel free to swap out any of the vegetables in this recipe to suit your taste or what you have available. You can also add cooked chicken or beans for some extra protein.
