For salads, sandwiches, and wraps!

Ingredients
6 eggs, hard boiledÂ
¼ cup mayonnaise or Greek yogurt
2 to 3 teaspoons Dijon mustardÂ
1 teaspoon lemon juice Â
Pinch of salt and pepperÂ
¼ cup finely diced red onionÂ
1 tablespoon chopped fresh chives (optional)Â
1 tablespoon chopped fresh dill (optional)Â
Preparation
Peel and chop hard boiled eggsÂ
In a medium bowl, whisk together the mayonnaise or yogurt, mustard, lemon juice, salt, and several grinds of pepper.Â
Mix in the onions, then fold in the eggs, chives, dill, and capers, if using.Â
Cover and chill in the refrigerator for 20 minutes. Stir, then season to taste and serve.Â
