About the Recipe
A low-carb, grain-free alternative to fried rice that goes great as a side dish or with Asian-inspired stir-fries and curries.

Ingredients
1 large daikon, peeled
1 tbsp olive oil
1 tsp peeled and minced ginger
2 garlic cloves, minced
1/4 cup diced scallions (optional)
1/4 tsp red pepper flakes
salt and pepper to taste
Preparation
Chop daikon into small pieces and place in a food processor and pulse until rice-like bits. Place in a towel or colander and squeeze out the excess water into the sink. Repeat this until you've squeezed out the excess moisture in all of the rice. Set aside.
Add oil to a large skillet on medium-high. When heated, add garlic and ginger. Let cook for 30 seconds and then add in the scallions and daikon rice. Cook for 1 minute and then sprinkle red pepper flakes. Stir to combine and cook for 3-5 minutes, stirring frequently.
Enjoy with a fried egg or your favorite stir-fry or curry.
