Curried Zucchini Pickles

About the Recipe

Fridge pickles are an easy and delicious way to use up summer produce. No sterilizing jars or special equipment required.

Ingredients

  • 2-4 zucchini

  • 2 cups water

  • 2 cups  white vinegar

  • 3 tbs salt

  • 6 garlic cloves

  • 2 tbs sugar

  • 4 tbs curry powder

  • 2 tbs peppercorn

Preparation

  1. Slice zucchini in rounds and fill jars. Add 3 cloves garlic, 1 tbs peppercorn and 2 tbs of curry powder to each

  2. Combine vinegar, water, salt and sugar in saucepan. Heat on medium until sugar and salt dissolve

  3. Divide brine between both jars.  Cover and refrigerate about 24 hours, then enjoy for up to one month.
