Creamy Spinach Pasta

About the Recipe

A quick recipe that will take the chore out of eating your leafy greens


  • 3 oz (90 g) fresh spinach

  • 1 handful of fresh basil (optional)

  • 1 cup milk of choice

  • 2 tbsp parmesan or nutritional yeast to make vegan

  • 1 tbsp cornstarch, flour, or potato starch

  • 2 cloves of garlic

  • pinch of salt

  • juice and zest of 1 lemon


  1. Blend all ingredients in a blender until completely smooth.

  2. Transfer the mixture to a saucepan and bring it to a boil, stirring regularly.

  3. Let it simmer for 1-2 minutes until it is properly thickened.

  4. Serve on cooked pasta or as a sauce with chicken or fish
