About the Recipe
The fall version of the feta TikTok pasta.
Ingredients
1 butternut squash, peeled and diced into 1-inch chunksÂ
8 ounces feta cheeseÂ
2 tablespoons olive oilÂ
1 teaspoon kosher saltÂ
½ teaspoon ground black pepperÂ
1 pound pasta (chunky shape)Â
Preparation
Preheat oven to 425 degrees F. Â
Add butternut squash to a 9x13 baking dish and place block of feta in the center.Â
Drizzle the feta and squash with 2 tablespoons of olive oil. Then sprinkle on the salt and pepper.Â
Place the feta and squash in the oven and bake for 40-45 minutes, until the squash is tender. Â
While the squash is roasting, cook the pasta in very salty water, according to package directions. Drain and set aside. Reserve 1 cup of pasta water. Â
Stir the reserved pasta water into the butternut squash and feta. Using an immersion blender or a stand blender, blend the squash till mostly smooth. If you do not have a blender, you can use a potato masher to blend everything together. Â
Combine the squash sauce with the cooked pasta and enjoy.Â
