Broccoli Cheddar Soup

About the Recipe

An easy and classic soup recipe filled with fresh veggies and yummy cheese from


  • 4 tbsp butter

  • 1/2 medium onion (chopped)

  • 2-3 cloves of garlic (minced)

  • 4 tbsp flour

  • 2 cups chicken or vegetable stock

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 head of broccoli (cut into small pieces)

  • 1 carrot (grated)

  • 2 cups milk

  • 2 cups cheddar cheese (8 oz, grated)


  1. Melt butter in a large pot over medium-high heat. Add the onion and cook for 3-4 minutes or until softened and light gold. Add the garlic and sauté for another minute.

  2. Add flour and whisk for 1-2 minutes or until the flour begins to turn golden in color. Pour in the stock, broccoli, carrots, and seasoning. Bring to a boil then reduce hear to medium-low and simmer for 15 minutes or until the broccoli and carrots are cooked through.

  3. Stir in milk and cheddar cheese. Simmer for another minute. Taste and add salt or pepper as desired.

  4. Serve on its own, with bread, or in a bread bowl. Enjoy!
