Sweet Potato Black Bean Chili

About the Recipe

A delicious one-pot chili that is ready in 30 minutes and packed with healthy veggies.


  • 1 tablespoon olive oil

  • 1 sweet potato, peeled and diced

  • 1 carrot, peeled and diced

  • 1 pepper, peeled and diced

  • 1 onion, diced

  • 2 cloves garlic

  • 1 can of black beans

  • 1 can diced tomatoes

  • 1 can crushed tomatoes

  • 1 cup of water or broth

  • 1 tsp-1 Tbs of chili powder depending on spice preference

  • 1 tsp cumin

  • 1 tablespoon of sugar

  • Juice of 1 lime


  1. Heat one tablespoon of olive oil in a pot and add onions, garlic, carrot, sweet potatoes, pepper, a pinch of salt and pepper, and chili and cumin and cook for 3-5 minutes on medium high until onions are translucent.

  2. Add diced tomatoes, rinsed black beans and cook for several minutes.

  3. Add crushed tomatoes, juice of 1 lime, sugar, and 1 cup of water and bring to a rolling boil. Reduce heat and simmer for 15-25 minutes until excess liquid is cooked off and vegetables are tender.

  4. Enjoy with cheese, sour cream, avocado, and your favorite bread.

*You can add jalapenos or your favorite hot sauce to make spicy
