Tim grew up in Scranton, PA and graduated from Scranton Preparatory School class of 1982. He went on to attend Penn State University for several years before landing at the Culinary Institute of America, receiving an A.O.S. degree in Culinary Arts in 1987.

After graduating, Tim and his wife Susan Quillio moved to the greater Boston area where he worked in management at both Host International at Logan Airport and Polcari’s Restaurant in Boston’s North End. From there they moved to northern New Jersey where he worked as an Assistant Pastry Chef at The Cakery (Dumont, NJ), an all-scratch traditional French patisserie and garnered much of the practical baking knowledge and skills that shaped many future endeavors in his broad food service career.

Upon moving to Greenwich in 1991, Tim was hired as the Assistant Pastry Chef at The Equinox Hotel and Resort, spending six years there before accepting a position as Assistant Executive Chef at The New York State Governor’s Mansion in Albany. In addition to serving Governor George Pataki and his family and guests, he served as Pastry Chef for a robust schedule of catered events that were held during his seven years there. During the same time period, Susan and Tim opened Spoonful Catering, a full service, off-premise catering business that operated in the region for the next fifteen years.

 After leaving  The Governor’s Mansion, Tim’s passion for the outdoors and locally sourced food led him to work at Slack Hollow Farm in Argyle, NY where he spent the next nine years participating in every aspect of the NOFA certified vegetable operation and served to complete, in a way, a  truly authentic farm-to-table food career! His time at Slack Hollow immersed him in the broad, rich agricultural community of southern Washington County, NY, and southern Vermont and deepened his understanding of and love for fresh, local food and the tireless efforts necessary to produce it.
